Following the successful debut of its first culinary chapter, Flavours of Royal India, Mausam continues its regional cuisine series with the introduction of Taste of Kerala, a limited-time menu celebrating the flavours and culinary traditions of God’s Own Country. Set against views of the Burj Khalifa and the Dubai Fountain, Mausam offers a striking dining backdrop that enhances its immersive culinary experiences.
Each edition in the series highlights a different region of India through curated menus that showcase authentic local cuisine.
For its latest chapter, Mausam turns its attention to Kerala, a coastal state renowned for its aromatic spices, coconut-infused dishes, seafood delicacies, and centuries-old culinary traditions shaped by trade, culture, and geography.
The specially curated menu showcases a selection of Kerala’s most beloved dishes, beginning with Parippu Rasam Vada, featuring crispy lentil vadas served alongside a comforting Kerala-style lentil and tomato rasam, and Kozhi Varuthathu, a traditional fried chicken preparation seasoned with chilli, turmeric, fennel, black pepper, and curry leaves.
The main course highlights include Karimeen Pollichattu, a signature Kerala fish delicacy wrapped in banana leaves and cooked with southern spices; Mutton Ularthiyathu, a richly flavoured dry mutton roast sautéed in coconut oil and ghee roast masala; and the classic Malabar Chicken Curry, simmered in coconut milk and aromatic regional spices. Vegetarian diners can enjoy the comforting Vegetable Stew, while the celebrated Thalassery Chicken Biryani offers a taste of one of Kerala’s most iconic culinary traditions.
To complete the experience, guests can indulge in Palada Payasam, a cherished Kerala dessert that perfectly captures the warmth and sweetness of the region’s culinary culture.
